Last week I thought I’d get into the Thanksgiving spirit ahead of time, so I decided to make pumpkin bread. It turned out fabulous! So fabulous in fact, I couldn’t get a picture of it before someone got into it. Oh well.

I got the recipe from one of my favorite cookcooks, America’s Test Kitchen Healthy Family Cookbook. What I really Like about the recipes in this cookbook are that wherever there’s room to make a recipe more healthy, they’ve done it, without sacrificing taste.

It was so tasty it didn’t even last until Thanksgiving. It’s a pretty simple recipe (really all quick breads are), so it went together pretty fast. And as a bonus the kitchen smelled like pumpkin.
