I have a ton of recipes that I’ve been marking that I want to try making. When I say a ton, I mean that it’s now starting to get out of control. So I decided to start making a dent in them, and I made Mashed Chickpea Pitas for lunch the other day.

So this recipe hasn’t been waiting to be made for too long since it’s from the October 2011 issue of Cooking Light. What made me want to try it is that it has chickpeas and pitas! I love them both separately, but put them together and I’m even more impressed.

I could definitely make this again. In fact, the recipe is even going into my binder of recipes. I’m pretty picky about what I let get put in there.
