I made lemon poppy seed muffins the other day. They were so good – perfectly lemony without being too tart. There’s lemon zest in the muffins and lemon juice in the syrup in the syrup drizzled on top of the muffins. The reason why there are two muffins missing on the photo are because I coudn’t wait, not once, but twice to test them

I was looking through my America’s Test Kitchen Cookbook cause I knew I wanted to do some baking, but I wasn’t sure what. When I came across this recipe I knew it was the one.

After a quick stop at the grocery store to pick up a couple ingredients I started baking. They were pretty easy to make. The finishing touch was making a lemon syrup. Seriously, so good! I think lemon and poppy seeds are one of my favorite combinations.
