I made this the other night and it turned out great, even if it did take longer to make than the recipe said. It was still definitely worth it.

There was enough for leftovers, and this was one of the things that I was looking forward to eating for lunches. It was just as good the second time around. You can find the recipe here.

What’s the last thing you made that was utterly delicious?

I found this recipe on Pinterest about a month ago. It’s from Beth over at Budget Bytes. I was going to party and was in charge of brining a salad. It looked pretty tasty so I thought I’d try it. It ended up being a success – there was none left, so everyone else must have liked it too.

The recipe was pretty simple even though it looks like there’s a lot of ingredients. There were three main parts, all of which came together pretty quickly.

I cooked the pasta, which took about ten minutes.

While the pasta was cooking I chopped up the veggies, which included tomatoes, zucchini, roasted red peppers, broccoli, and red onion. The recipe also called for summer squash, but I couldn’t find any at my grocery store. I was also supposed to add fresh parsley, but I forgot to buy it, so my salad went without.

The dressing was pretty easy to whip up too. Dijon mustard, vegetable an olive oils, Italian seasoning, red wine vinegar, minced garlic, salt, and pepper was all that was in it.

The other night I thought I’d make a recipe from my October 2011 issue of Cooking Light. I decided on the Quick Pastitsio, and I have to say it turned out pretty good. There was lots left over and it’s great reheated the next day or two. The only downside to the recipe was that it wasn’t actually that fast to make. But if you’re looking for something hot and filling on a cold night, I would definitely recommend this casserole.
